    Couldn't agree more. For people without a battle hardend pallet, pairings can make subtle flavors obvious.

    While not necessary, a good beer/food match ups are amazing. Spicy/greasy food with ipas, sours with balsamic salad dressings, stouts and cheesecake, oh man... Don't get me wrong, I love beer and food alone, but when they compliment eachother...bliss.

    Leaving co2 line and disconnect on keg?

    I always sanitize both posts and both disconnects, just because its easy and I figure why not. My disconnects have the threaded flares so its easy to take them off, dissemble, and sanitize.

    Yeast in suspension

    How long was it fermenting before you bottled? That you be your answer...some people cold crash or use irish moss to make their beers clearer, but letting it sit long enough in fermentation will do wonders, for flavor and clarity.

    Suggestions for adding apricots?

    I recommend using real fruit if possible. I used an apricut extract with a nut brown, and even after cutting the recommended dose in half it carried a very unnatural flavor into the beer.

    +1 to using craigslist. i bought a kegerator and probably spent more than i should have. definately craigslist the minifridge to convert(youll find all the instructions/best types to use on here). you might find the other stuff there too (co2 tanks), and then youll have to decide how much...

    I've found whole cone hops to be less robust and less bittering as their equivilent weight in pellets.

    Are you using a bottling wand? Cheap investment that makes things a whole lot easier.

    this. And how would it be a realistic first date? You know eachother...the hard parts already done. The survey is weird...maybe if your roommate relaxed, his/her odds would pick up.

    using a hydrometer he could do something like evaluating how much yeast will eat at different temperatures...or the the affects of different sugar amounts on final gravity. or you can just make two ipas with different hops and analyze that:mug:

    i wouldnt worry too much as long as everythings been sanitized, my beers survived worse. dont worry about letting it settle too much, after all you are using the secondary to drop everything out again and let it clear before bottling and kegging. the risk of oxidation is there, but it probably...
