    Malting Gluten Free Grains

I do not have a lot of experience with millet, but with buckwheat and quinoa I had some problems with getting consistency in my malting process (some grew super long, some not at all, etc.). I started only using water through a Brita filter and it has improved my malting quality and my process...

All grain GF sweet vanilla stout

Your buckwheat looks great! I would dry it now. I also used bob reds mill rolled oats for my stout. The oat flavor did come through, I just had the oily problem.

    buckwheat malting

1+ on the strainer method. I only grow them out about a quarter inch and dry at 90 overnight, then 160 for 5 hours. Then deshoot in a metal strainer. Kitchen Aid makes a nice big one with a fine mesh. If they are really dry they crumble off easily.

All grain GF sweet vanilla stout

I did something similar to this with buckwheat, millet and bobs red mill GF oats. I used more millet and 1 pound of oats. Final product seemed oily from the oats. I would not use oats as more than 10 percent of the grain bill. Even then maybe toasting to dry them out?

Need thoughts on DFH 60 Minute GF Clone

I agree with dirtbag, my last GF IPA had 1 cup of blackstrap and I can taste a hint of licorice. Not really what I was going for, would half it next time. Adds great color though.

    Malting Gluten Free Grains

After throwing out all 5lbs Im going to start over with some new millet from a new distributor. Thinking back all my grain was sitting together and the whole foods bulk bin supply was extra moldy in general within 24 hours of water exposure. I will run a small test batch with the new supply and...

    Malting Gluten Free Grains

With home malting millet...maybe I am missing something but I have tried 3 different grain sources and I am growing mold. Process is as follows: 2 hour soak, 2 hours dry in strainer, 2 hours soak, leave in pile on paper towel/cookie sheet overnight, spread out on new paper towel/cookie sheet...
