    Gravity still high (braggot)

    1.040 is pretty high for a Braggot. Could you post your process/details? It seems to me like there must be something else going on, champagne yeast will eat ANY sugars. Have you checked the PH? Did you mash very high? Is there anything you can do to cool it down a little?

    Looks normal to me. If you don't have an infection you'll think "hmm, this looks a little weird" If you do have an infection, you'll KNOW.

    Back sweetening mead with honey

    Keep in mind that meads taste sweeter as they age, so if it's not very old & you sweeten it now, in 6 months or a year it may be too sweet. I personally like my Raspberry Melomels to be fairly dry, but they need a solid 6 months to be good.

    I prefer my Braggots to have carbonation, so for me it's normally 1 month in primary, then to bottles. They improve drastically within the first 6 months, so the longer you can wait the better.     Making a cider with base malt for sweetness

    Sounds like a graff, have you checked out Brandon O's recipe? It's the same basic idea, keep some of the sweetness by adding unfermentable sugars to your cider. Why not give it a go & let us know how it turns out! EDIT: Crud, evsol beat me to it.

    6 weeks is no problem, I've had beers in primary for 3+ months without any issues.

    Totally depends on how big of a batch you're planning to make. There's nothing wrong with adding honey to a beer, just keep in mind that the final fg will be lower than with malt only. Sent from my iPhone using Home Brew
