    Ambrosia IIPA

Give it a go, you aren't going to hurt anything by doing so. I will say that I've had mine on tap for a few months and the wood is just starting to get tolerable. I wish I'd toned down the oak... by about 75%.

How much light is too much?

I have used a flashlight to monitor the end of the racking cane during racking, with no real issues. I typically ferment in my upstairs bathroom, which is dark 99.99% of the time, except when I take my daily #2, then I just leave the shower curtain shut. never had an issue.

    Hello from microbrew Mecca...Seattle.

Greetings! Seattle is a great city for beer, make sure you visit Naked City Taproom (owned by fellow HBT'er Brewtopia) in the Greenwood area! Where in seattle are you? What are you going to start with, extract? minimash?

    another n00b, another first batch

relax, don't worry, have a (store bought) brew. (since this is your first batch) What temperature is your beer fermenting at? What type of yeast is it? What is the target O.G. from the kit? Most likely it is OK and will be just fine, but 12hrs isn't enough to get worried yet.

About to begin bottling my first batch

A secondary fermenter isn't necessary, perse, but it can help reactivate dormant yeast if they've gotten sleepy. Also, 64 is pretty chilly for most ale yeasts, generally 66-70 is a good range, I'd try to warm that room up a hair more.

    Extract Process Improvements for 2010

I will say that with an immersion chiller (the standard kind) I get my wort to pitching temp in less than 5 minutes. I stir while doing so and it helps introduce air as well (instead of an airstone or the like). I've never incurred contamination, and it really reduces the time after a boil to...

    Don't trust the airlock

Get a better bottle, 6 gallon. You can safely ferment 5 gallon beers in them (plenty of head room), and they will not break if you accidentally drop them. Also, lots of rinsing with hot water and then sanitizer basically negates any need to scrub, thus potentially incurring scratches. I haven't...

About to begin bottling my first batch

If you are having trouble finishing fermentation, you might try a transfer to secondary for a couple more weeks. It does double duty, one to get the brew off the yeast cake (although 2 weeks isn't bad), and then sortof wakes everything up and can reinvigorate fermentation. Temperatures are very...

    dry hop in keg? Problems?

1 ounce of pellet centennial. I'm going to fish em out, let it settle and try to purge the hop sediment after a week or two. Thanks guys!

    dry hop in keg? Problems?

Sigh. I can't search for words that are smaller than 4 letters. Dry. Hop. in. Keg. 3 letters or less. So please forgive me if this has been covered other places. Anyway, I read that someone had dryhopped in the keg, using a 3" stainless steel ball hooked around the feed tubefor the beer, so...

    Anti-IPA ?

Oh man. I loves me an IPA. Almost 6 years ago a friend bought me a 6er of Lagunitas IPA as a housewarming gift. I hadn't ever met an IPA that I liked at that point. I tried it and it was terrible. I couldn't understand how anyone could possibly like this beer!! I was drinking copper and amber...

How much idophor do you guys use?

Yikes, I must not be using ENOUGH Iodophor. I'm just about out of my first bottle of it, but my concentration of it NEVER gets yellow or red at all. Its rare that I can even discern any discoloration in my sanitizing liquid. None of the batches I've made have ever had an obvious infection (is...

blow off tube diameter needed quickly

might want to move that to the bathtub for a few minutes until its figured out, alternatively, you could sacrifice a small chunk of one of your racking canes and use a normal tube. Cut 2" off the cane, stick it in the stopper for the 3 piece airlock, and then run that elsewhere. I'm currently...
