I always brew early, nothing like firing up the burner at the crack of dawn. I love the smell of Wort in the morning (stands with chest out, hand on hips). The neigborhood is asleep, so I don't start jammin to AC/DC untill 8AM.

My wife is crazy about wheat beers. She likes my homebrewed wheat better than any store bought, so every third batch is a wheat for her. It keeps her happy and it keeps her from complaining about this obsesion I call a hobby.

A Rye IPA in the bottles tonight, then brew an American Wheat Saturday, while drinking a strong Ale. ahh, good times.

I used gelatin once, 1 tsp in five gallons, my beer never carbonated in bottles, even after 8 weeks. I will never use it again, untill I start to Keg. But it was the best flat beer I ever Had. Just won't do it again if I plan to bottle.

I brew because I'm on a quest to find the perfect brew (for my taste). I've came close, but Man, there's always that possiblity I'll hit it on the next batch, or the one after that. I just love to brew, it's that simple.

Do I add hops to Boil Kettle while draining from MLT or add after collecting all the wort? Does this method smooth out some of the harsh bitternes or does this add something more, like flavoring? Thanks in advance.

Hi all, just wanted to say thanks to all for the infromation I have gathered from this site. I started brewing this past summer, after three extract batches, I moved to all grain. I have done four ag batches so far. Just got to get the wife to love hops like I do. Thanks agian.
