    Man, I do love being on the East Coast

    There are a few good beer bars in the DFW region (ginger man, flying saucer) and even a brewery in Ft. Worth (Rahr & Sons) but they are few and far between. Central Texas and even Houston have a much better selection.

    My friend bought the summer variety pack over the weekend. I thought the kolsch was pretty good. light and crisp, an easy drinking beer down here in the Texas heat. The IPA sucked ass, though.

    Hopback before kegging

    I've heard the same. If the wort has been cool for 4 days, Idk if you're getting the same extraction as you would running hot wort through it. I just add hops at flame out and then dry hop. It works.

    Seriously? Give me a break with the hops already.

    before I began homebrewing, I wasn't a fan of hoppy beers. My favorite was Shiner, a relatively hopless bock. But now that I've seen the light, so to speak, I've gained a real appreciation for big hop profiles, and even consider IPAs to be one of my favorite styles.

    I dry hopped with pellets and then just siphoned the beer to the bottling bucket through a hop bag. No floaties.

    Yea, I don't remember the temps exactly, but I definitely raised my primary's temp 5-10 degrees by fastening a beach towel around it with an old belt.
