    Fermentation temp took off...

So I brewed a Bavarian hef sunday morning. Not the most perfect brew day, but all in all not terrible. I pitched wyeast #3068 and stuck the fermentor in a closet where temps in the winter hover around 60 degrees in the winter. After 28 hours I had a vigorous fermentation going and noticed the...

    Ice storm/ power outage

So I brewed a nice amber last weekend. Strong fermentation the first couple days and then it died off. Power went off yesterday morning and my house is currently at 50 degrees. No idea when power is to be restored, but I expect my house to get down near freezing before it does as it is about...

I'm going to brew an Irish extra stout based on a recipe from BYO magazine. The recipe calls for 8 lbs. golden promise, 2 lbs flaked barley, 8 oz. torrified wheat, 1.75 lbs chocolate malt and 8 oz. brown malt. The mash schedules says to to rest the golden promise, flaked barley and torrified...

    Late Hop addition

I brewed a Porter over the weekend and had an oops right at the tail end. I finished the boil and turned on my IC. About 5 minutes later I realized I had forgotten to add 1 oz of Cascade at 1min. I threw them in as soon as I realized. What affect might this have on my end product.....if any.

    Oxy clean

Read all kinds of stuff on how great oxy clean is to get the gunk off, so I got some and soaked a bunch of dirty bottles that had been sitting in my garage. Rinsed them all off over the weekend, and now they are all covered in this powdery white residue. filled a tub with water, sprinkled in...

I'm just going to throw this out there to see what the majority would do. I have an irish stout in primary (1.044 og), will have been there three weeks this Sunday. Recipe calls for 2 weeks primary, 2 weeks secondary. I'm heading out of town at the end of the 4 weeks stated. I'm trying to...

    First time grower

So I decided to get some rhizomes in the ground this year. This is what I did. Tilled up and strip of ground and removed the big rocks. My soil is mostly a layer of sandy gravel on top with some clay about a foot or so down. I tilled in some topsoil and composted manure (the stuff you can...

    dogs and beer

So who gives there dog samples of your beer? My dog absolutely loves beer, but even after a little bit she tend to shake her head a lot. As if her ears are bothering her. She can't be getting drunk off an ounce of beer right? What about the hops. I know they aren't supposed to be good for...

    under carbed bottles

I have a brown ale that has been in bottles for 6 weeks or so. after 3 weeks or so they have been in my basement at roughly 55-60 degrees. Some I have had in the fridge for a few weeks and they just seem kinda flat. I brought the remaining upstairs and inverted the bottles and shook a little...

    Efficiency(sp)

Ok - I just read a thread by someone asking about efficiency.....again. I'm not a super experienced brewer (2 years in) and I've never really been too concerned with efficiency. I pull a recipe off the internet that gives an estimated OG. I assume they figure around 70%?? I'm usually at or...

    False Bottom Advice

My first mash tun I built I used a rectangular cooler with a braided line. Never had a problem draining or with stuck sparges. I'd just open the valve and go. Never got super clear runnings but not that big of an issue. I recently upgraded to a 10 gallon round cooler with a false bottom...

    Bananas?

I brewed an Irish red back in May. I had one bottle left that wasn't quite a full bottle that had been in the fridge for a few months. The batch turned out great and I really enjoyed this beer. I hadn't opened this bottle just because it wasn't a full bottle. I poured it the other day...

    beer and food pairings

So I'm just sitting here surfing and having a few beers. I got a little hungry so I grab a few tortilla chips. Next swig of my wheat beer tastes nothing like the previous. It almost ruined the beer. Was it the saltiness?? Is there a general guide of what food goes good with what beer out...

    clear glass bottles

So you always hear people say not to use clear glass bottles. But if you bottle and then it goes into a closed box in a dark closet to condition and then from there to a dark fridge to chill......what difference is it going to make. The beer is in the dark all the time anyway, how does it know...

    Red's Rye Recipe

    vanilla bourbon porter question

Ok, just wanted to see what the general consensus is. I've read different things where people either put the vanilla beans in bourbon for a week and then add to secondary, add just the beans to secondary and then add bourbon to bottling bucket at bottling time....What do most of you do, and...

    Too cool for ale?

So I put my fermentor in the basement where the abient temp appears to be about 57-58 degrees. Is that a little cool for S-05? I could move it to the bedroom closet where the temp stays a steady 67-68. Just thought I would try cooler. I don't SEE any activity yet, but it has been less than 24...
