    Use promash to project OG based on your system. Extract amounts have no effect on efficiency because extracts are already converted to sugar (no starch).

    I'd be afraid of scorching the grain. If you want to do step mashing I would recommend a RIMS. It is difficult to control a step mash in a HERMS due to heat conduction.

    Are you sure the liquid was at 60degF when you measured? Most hydrometers are calibrated to 60. You can measure hotter or colder, just adjust using promash hydro adjust function.

    Yeast Harvest Question

    I put the yeast harvests in a sanitized mason jar. for a lid I just rubber band some seran wrap over the top. Then into the fridge they go until I make them into a starter.

    If you're going to brew a big beer w/ appropriate volume of yeast just set the sanitized lid on top of the bucket (do not seal). You should seal after a few days and violence in your ferment ceases. you are fine tho... Cheers.

    10 gal batches

    I fill my 15 gal converted keg when I mash with 30 lb of grain. I couldn't go any smaller on that vessel. If you only want to brew smaller beers at 10 gal you are fine.
