Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

I didn't add any grains between the first and second runnings so I just kept sparging with 170 degree water and collected it in a separate kettle.

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

I brewed this on Sunday with a few variations due to my fear of low efficiency and the Hops I had availalbe. (A couple extra lbs of 2-row due to low efficiency; Summit 17% AA, 8 oz for 20 gallons in place of challenger) Here's my system - 25 gallon HLT, 25 gallon BK, and a 30 gallon MT...

    Chocolate Coffee Stout

I made a coffee stout where I added the cracked beans to the wort while I was steeping other grains. I definitely wish that I would have added coffee to the secondary instead. The result was a strong, acidic, burnt, day-old coffee flavor which I could have done without. The coffee I chose was...

    Grainbelt Nordeast clone

I'd be interested in the recipe as well. Nordeast is leaps and bounds better than the original grain belt and grain belt light. It surprises me how many people up here love the original. I will also be trying some of the other schell's recipes, after I tour the brewery this summer and decide...

    Surly Furious clone

I am brewing it this weekend too! :mug: I will be bottling an amber ale tonight, transferring a stout to that carboy after cleaning it, and starting a diacetyl rest on a pilsner too which is still in the primary. I can't believe how addictive this hobby can be!

5+ year old LME in a can

Both batches are now fermenting. I'll give an update as soon as I transfer each batch to secondary. The flavor of the stout is a bit much, but I don't know how much of that is the 5 year old LME and how much was caused by the added coffee that was steeping for 45 minutes. Only time will tell...

5+ year old LME in a can

I made the trip up to Midwest Supplies and picked up Nottinghams dry yeast, 1 lb of chocolate malt, and 1 lb of roasted barley to steep with for this stout. I also picked up two pounds of Dark DME and some corn sugar to use instead of the sugar the recipe calls for. I want this to have a nice...

5+ year old LME in a can

That's awesome. Should I use a specific kind of yeast? The kit typically calls for a dry yeast sachet that is included.

5+ year old LME in a can

When you say "Finishing High" are you referring to the FG?

5+ year old LME in a can

I picked up a carboy and some bottles on craigslist last night and the seller threw in a can of Munton's Export Stout for free. After getting it all home, I realized the expiration date was over 5 years past! Should I bother making this stuff? The can looks perfectly intact without any...

Liquid Malt Extract (LME) expiry date on can

I picked up a carboy and some bottles on craigslist last night and the seller threw in a can of Munton's Export Stout for free. After getting it all home, I realized the expiration date was 5 years past! Should I bother making this stuff? The can looks perfectly intact without any bulges, it...
