    Hmm....I don't know if having only 3 gallons of water is your problem though. I only boil 2.5 gallons of water when I do all my extracts. After adding my extract I'm around 3 gallons. By the end of the 60 minute boil I'm back around 2-2.5 gallons. So your situation kind of stumps me......sorry man.

    Is 8-9 months in the bottle too long?

    If your going to leave you're beer for a long period of time I would suggest getting some oxygen absorbing caps. I used them once for a beer that sat for quite a while. Beer still tasted fine so I'm assuming the caps helped.

    No.......:( But kind of. I only have two fermenting buckets. Both are full so if I put my Cream Ale into the secondary to add vanilla, then I can brew more beer! That sounds like a good enough excuse to me! :mug:

    Well, an inch of headspace in the TAD bottles is more volume than an inch of space in a bottle (neck), so it will be a difference.

    Yes, you can get just one tap and when you finish one bottle just put the tap on the next one. Unless you would like to have a couple different brews in the bottles and a couple tapped at the same time. As far as the carbonation goes.....I still haven't opened my TAD bottles for the first time...
