    21 days is nothing for this beer. Keep waiting. Heat it up if you can. You're not going to hurt anything leaving it on the yeast for 6 weeks. I've brewed this 3 times now, and in the end, I've given up on it. Problem (1) If that Rochefort yeast even thinks about getting over about 68F...

    So, maybe drop the CaraMunich to 0.5 lb? Lower attenuation sounds good, but 1332 is supposedly nutty, and 1272 is tart, and I'm not looking for either... Maybe the stated effects are more subtle than I'm imagining?

    I made a 1.5L starter from an activator pack. It took off pretty quickly, but I suppose it's possible it wasn't enough. I can definitely try a bigger starter next time, seems like I'm certainly unlikely to overpitch.
