Ok i've had this one in the fermentor a little over a month now. the alcohol presence is pretty strong in the taste but besides that is quite nice. Is there a way to mellow this out? airlock is still bubbling too.. maybe a few times an hour at this point.

I want to do a typical 5 gal batch but instead of getting say 5.5ABVish from this recipe i would like to get around 7-8.
Could i make this happen in a 6 gal wort or would i need more water?

I did this same recipe and OG was at 1.070 - after couple weeks i was at 1.036 - i tried repitching with more alcohol tolerant yeast and it didn't budge.
Bottled yesterday, ABV is about 4.4. Taste decent but recipe has to be incorrect.
yeast was not started, just pitched and mixed. it was aerated pretty well. Very little activity on the airlock but it's obviously working if it's down to 1.036 from 1.070, ya?

The OG called for 1.048 -56 range and expected FG of 1.012 - 16
Once enough water got me to the 5 gal mark i was at 1.070 so put the airlock on at that after pitching.
After 4 days the reading has dropped to 1.036
