    I just found out about a Texas maltster / malthouse called Blacklands Malt. http://www.blacklandsmalt.com/ They're in Leander, TX. The website says they use Texas grown barley, and they do the malting. I'm inquiring about ordering. I'll let y'all know what I find out.

    Cypress Grape & Grain is actually on 249 in Tomball. It's a small place. The guy says he's planning to add more. I think he recently added more grains and a mill.

    How do fellow Texans control temp during fermentation?

    I finished up my keezer and go it up and running with a keg of Janet's Brown Ale and a 1/6 barrel of Alaskan Amber from Spec's (I have a sanke coupler). Fermented the Janet's at 65F in my keezer/fermentation chamber. It's early but it tastes great.

    You're probably correct. I wasn't positive the Love could do what I want. You are correct about how I need it to work and needing two probes. I am running it right now with the STC-1000 set at 7C and I have set the aquarium heater at 65 and that works and I set it at 80 and that works. So...

    People do run light bulbs in keezers believe it or not, but that doesn't solve my problem. My problem is not being able to control the heat below 65F. The aquarium heater has a built in thermostat that goes down to 65F. The light bulb would have no temp control.

    Guide to set internal chest freezer thermostat to >32F; Eliminate external control

    My understanding is there are two thermostats: one for turning the compressor on and off and one for opening and closing a damper. Not sure if they'd both have the coarse adjustment screw.
