    Chimay Tripel Clone - first fermentation

    I agree with Permo. Start in the upper sixties and rise after a few days. Temps up around 80 are best left for heavy Abbeys or sours using Roesalare or similar yeast.

    Sierra Nevada Ruthless Rye

    If you do try to clone it, watch your hop load (especially bittering). The rye has a bitter taste profile that can easily put you over the top if you go with too much AA in the beginning of your boil.     Thin white film floating in secondary?

    I have had this thin film that can almost be like a super thin wax coating at least 4-5 times. It has never been a problem. Usually, it sticks to the side as the bucket or carboy empties or I stop the siphon just before the end.

    Just what is/are Klages?

    I was looking in the EC Krauss catalog and they advertize that they have Klages Two-Row barley in 50 lb sacks. So what you guys are saying is that to order this you really don't know what you're getting..right?
