    2017 Perry

My go to pear tree (some 500 miles away) was devoid of pears this year due to a late freeze. A co-worker found a very old pear tree in the Hill part of St Louis. He and I picked 8 5 gallon buckets of pears, giving each of us 5-6 gallons of clear juice. The pears were small round, the very ripe...

    Double Mash

Was reading the newest IPA book yesterday and in a couple of the recipes it called for a double mash. First mash at 1.3 quarts per pound, second mash at 1.7 quarts per pound with strike and mash temps given. Am I overthinking this? Is this just batch sparging?

(grams of gypsum, calcium chloride, whatever) Bought the "water" book, maybe I'm not remembering my chemistry well enough (its been over 30 years), but any help...

    Traditional African Beer

I've been asked to brew some beer for "Africa Night" at my church. Any ideas as to what this would be? I'm assuming that it should be based on sorghum, a gruit style? Any ideas?

Will the addition of Isenglass hurt the vitality of yeast harvested?

    Beer Engine

Put together a beer engine, total cost, about $50.00! Get almost a half pint on each pull, tho I need a bigger handle to make pumping easier.

    Fruit Flies

They are swarming around my taps. Any good methods of getting rid of them? Seems every time I pour a pint, I get one out of the tap.
