    Acid Malt in Saison ~ Why ?

    I see many Saisons using Acid Malt and many that do not. I know it affects the PH in the Mash; but are folks using it for Flavour or MAsh PH when brewing a Saison? If for Flavour, what does it do? Im brewing a Rye Saison this weekend with just Pilsner and Rye;

    Briess ~ Bavarian Wheat DME - Pontential Yield in Beersmith

    I just brewed a pure DME Bavarian Wheat using Briess. According to Beersmith, the Potential Yield was 1.044.. and my 5.75 lbs with a 6 gallon boil/ 5 Gallon yield "should" have given me a 1.050... But, it came in at about 1.041 with the five gallons. I'm positive on the measurements! I...
