    Yeast question....

    Can you use a lager liquid yeast for an ale recipe??? I was looking through a bunch of recipes I had and it was for a pale ale... It said to use Wyeast 2112 (california). but when I looked that up in Promash, it said it was a lager yeast.. can you do this?

    3 weeks and counting

    My beer has been in the bottle now for 3 weeks with little carbonation.... Is it true that a lot can change between week 3 and 4??? Also, this is a honey beer, someone once said honey beers could take longer than average to bottle carbonate, is this true??

    CO2 question please..

    do most of you guys get your keg to the right serving pressure and just leave it hooked up until the beer is gone? or do you disconnect and pour beers without gas until the pressure gets to low and then hook it back up again?? I've been getting advice on both methods...

    Dumb CO2 question

    If I have a keg in the fridge hooked up to CO2 at serving psi of 12...and I go on vacation for a week, can I just keep it hooked up or should I diconnect it? reason being, will I be wasting a lot of CO2 or as long as the beer isn't going down, no more gas will enter the tank?     Secondary Temp question

    Just curious.. I know primary ferm temps need to be around 70 or so for the yeast to do their thing.. but what about secondary fermentation?? Since fermentation is over when in secondary, is it ok for the carboy to sit in a room that is much cooler, say around 55-60 ??

    New Kegging question

    I am interested in moving to kegs because bottles are PITA.... most people use the 1-2-3 method bottling, but since the CO2 is carbonating the beer in a keg and it only takes a few days, do you still leave the beer in the keg for 3 weeks before drinking, or can you drink kegged beer basically...

    hey. I think I made a terrible mistake. When I racked my beer from primary to secondary, I made sure not to aerate the beer by putting the hose all the way down and it just syphoned in nicely... BUT when I did that, i noticed that the 5 gal carboy I am using really didn't fill near the top...
