    @RCope are you purging after you DH? I have been DH'ing at 48-60 hrs into fermentation, but have been doing that b/c I don't have a way to ferment under pressure/ purge my Anvil fermenter.

    I do a Christmas Porter every year...well, I kinda have to do it every year or some of my family might riot. American Porter with vanilla, cinnamon, nutmeg, and some cocoa nibs. Just cracked one of the 2019 batch. Tastes good, will be really good by Christmas.

    As others have said... If I want the flavors of the things I'm adding to shine, I use Vodka. If I want a bourbon/ whiskey flavor, like bourbon oak and vanilla in a RIS, I use that. Dark spiced rum...sounds interesting.

    Okay, 2 questions. 1. What all would I need to keg? Simple setup. 2. Would it improve the longevity of my beers? Could I keep a keg around for a couple of months and still have a good beer? I know, what a weird question.
