    I went to the store to purchase a vial of Irish Ale yeast for a stout recipe but it was out of stock. I instead picked up a vial of English Ale yeast. Will this work or was it a bad choice? Also, is there really a right or wrong choice? Will any style of yeast work when brewing beer?

    My hydrometer was correct measuring clean water at 1.000. As for temps, I mashed in at around 155-160 F. I did not do any calculations concerning this. My boil temp was consistent with around 220 F
