Matrimonium Old Ale Recipe.. Any Ideas??

I am brewing an Old Ale as a wedding present for my brother. He specifically wanted a nice big Old Ale with very little hop character. Can anybody let me know if anything seems off? Matrimonium 19A-Strong Ale-Old Ale Wort Volume Before Boil: 6.60 US gals Wort Volume After...

    Label Removal Thread

I was getting really frustrated with my first big batch of bottles and just figured I would get as much off as I could and use bottles with label scraps on them. Just before bottling time, I decided to try to use some steel wool that I had sitting around.... WOW! The steel wool is like a...

Sludge On Top of The Primary

I brewed my first batch, a molasses sweet stout, last night and tossed it into primary. Everything went well and I was beyond careful with sanitation. After 7 hours, I was getting bubbles (1 per 3-5 seconds) coming out of the vodka my blowoff tube is sitting in. Happy day. I was so excited...

    My First Sour!! *sarcasm*

The starter was 1.038, the beer is just over 1.060 And, wyzazz, I did drink it... Drank the hell outta it. I'm not the kinda guy to waste alcohol :rockin:

    My First Sour!! *sarcasm*

I did clean and sanitize everything that the starter came into contact with. Just never read or heard anywhere that starters usually smell sour. Thank you so much for the information; good thing I didn't toss it down the sink.

    My First Sour!! *sarcasm*

So I made a 1.5L starter on 12/6 for my first batch (OG of 1.038). Covered with a piece of sanitized foil and let the magic happen. I saw a good amount of very fine bubbles after just about 6 hours that subsided after about 30 hours. I tossed the starter into the fridge at this point and left...

    First Recipe!! Any suggestions?

Pardon my ignorance, but I was under the impression that the roasting of these malts sufficiently converts the starches and that this is why they are considered acceptable for steeping. Can I really make a big difference by providing the enzymes present in the pale two row in 30 mins? If...

    First Recipe!! Any suggestions?

Thanks for the input. I had been thinking about skipping the secondary, as I have read that you really do not start to have problems with autolysis for quite a long time, but was told by somebody at my LHS to go ahead and do the secondary.... I think I will take your advice and just leave it in...

    First Recipe!! Any suggestions?

So my wife and I have spent the last three and a half months reading and collecting equipment and prepping for our first brew day, which is looking like it will be this coming Saturday. A couple days back, we went to our LHS and picked up some ingredients for a sweet stout recipe that I had...
