Thank you very much for the kind compliments! I've made many adjustments over the years based on what ingredients I can get. I actually use C40 in it now as well, but I still always toast my malt. You can definitely tell a difference. I still brew it about every other brew day!

    RIP Big Kahuna!

This sucks. We had the pleasure of hanging with Charles several times. He was always a happy guy and had such a genuine personality. It pained me to hear of his family stuff but I thought if anyone could endure it, it would be him. I'm not sure what happened, but when I saw the news...

The reason for the 90 minute boil is to make sure any DMS is boiled off. YMMV in this case. If you use Pilsner malt as a base malt, that will have more DMS pre-cursors and more than likely requires a longer boil. I don't do 90 minute boils anymore because I don't detect DMS in my beers. This...

And why Nugget to bitter? I really wish they wouldn't call that recipe Lake Walk, when it clearly isn't.

It seriously never gets old. Thanks to all of you who keep brewing it! Toast to you!

Can't believe this recipe is still being brewed! You guys are making my head big (ger)! I have 10 gallons in my conical as we speak...just dry hopped yesterday. I'll post a pic on the first pint! Zeemos: For 5 gallons 1 packet is enough. Just use your standard water adjustments for a pale...

I'll weigh in. Adjust your recipe to be about 1.048-1.050 and 44-48 IBU. That's the target range I go for. I've been using Beertools for the software and I adjust the AA% of the hops for whatever I get from the brewstore. It is home brewing, it doesn't have to be exact. ;) I'll also offer my...

Nope. Had to use Simcoe pellets though. Brew day went great. Once again, can't wait for about 6 weeks from now. Tapping this the day SwAMi75 gets here for a visit.

I'm brewing a batch right now...thought I'd check in. I love brew day.

Thought I'd check in after quite a long time...it's really cool to see everyone still brewing this. I still brew it once every few months, and I don't budge from that original recipe. My only issue is not having Amarillo leaf hops. I think pellets are a bit more harsh and make this more of an...

That's pretty awesome. Do you have a website? What kind of varieties do you have? I'm in Heidelberg, but we leave in January. I'll only be able to brew a few more times but I'm desperately trying to find "American" varieties.

You could probably just replace the Toasted Malt with Vienna. They are quite similar, IMHO.

The main reasons for a 90 minute boil involve driving away DMS and helping with stability as far as protein haze. Search this topic--it's good stuff to know. More important for all-grain brewing than it is for extract. I would just add more base malt. No need for more adjunct malts. And like...

I checked the recipe on the first page...I brew it exactly like that. I think what put the last batch over the top was running the fresh hops thru the HopRocket. Creates an incredible aroma. I think the Citra really compliment the beer...but not necessary if you don't have it. I'm headed to...

Wicked! Great brewing! Which comp, if I might ask? I just racked a batch over to a keg yesterday. I've brewed this beer 29 times and the latest batch is by far the best. I used my Hop Rocket...and I also made a couple of late additions of Citra along with the Amarillo/Simcoe. F'ing...
