    Beginners question

It looks like it was pretty active. As for the flavor, it may not be that ester flavor, but more towards the fruity side since that yeast likes 57-70F. At least this is the case with hefeweizen yeasts, when you go towards the warmer side you get that banana flavor instead of the strong ester...

    Yeast suggestion for ESB

I'm considering doing an ESB and spotted the Surly Bitter from Northern Brewer. It's just a bitter, so it's between this and a seasonal ESB kit from Austin homebrew. I can only do partial mashes right now, so if anyone has a suggestion for a great ESB kit, please suggest away. My main...

    New yeast or starter?

Ha, I gave a case of my last brew to my friend and his wife. It was a Schneider Aventinus clone, which was excellent btw. Sounds good. Looks like I'll be brewing on sunday if I can get a starter done tonight, and another one tomorrow. Thanks for the help.

    New yeast or starter?

No no, I would have too, but I've been hanging on to it until I had bottles to fill. That sounds like a good idea. I'm relatively new to brewing. This will be #4, and I've never done a starter. How do you determine the gravity of the starter? More DME per water, or just a larger starter, say...

    New yeast or starter?

I have a belgian wit ready to brew soon since I have available bottles, but my yeast had a "best by" date of 03/28/11 :(. I have some wheat DME, and a 1L flask for a starter. Mr. Malty however says I would need 2 packs of yeast this old to make a viable starter. Since I got it, it has been...

First time matching the expected OG

It'll be a while before I try to move to all-grain. Not enough space for it where I'm living. Anyways, I checked in on it last night, and it had started fermenting within 8 hours, and completely forgot about how vigorous it would be fermenting. Checked on it this morning to see my airlock full...

First time matching the expected OG

Ok, good to know, because my first two were 8-10 points below what the recipe said. Still tasted fine, but a 3.5% IPA just sounds weird. :p Thanks guys.

First time matching the expected OG

I'm celebrating because I not only achieved my goal of finally meeting the expected OG, but surpassing it. This is my 3rd brew, a Schneider Aventinus mini-mash clone, and I got an OG of 1.076, and it said to shoot for 1.074. I didn't increase any temps, or time, at least not intentionally. I...

    Questions on partial mash brewing

Sorry to hear about your back. I've only done two brews so far (actually one completed, and the second is in my secondary) but both have been partial mash. I can only speak by comparison to other draughts or bottles, but the IPA was delicious, as was the consensus with my friends who can handle...

    Temperature Limitations

I was looking at that from Billy's blog, but how hard is it to keep a stable temperature. If I left it for 8-10 hours would it stay within a decent range?

    Temperature Limitations

Exactly the information I was looking for. Thanks for that, and for the blog Billy. And yeah, I noticed that in the height of fermentation my carboy was reading ~74F.

    Temperature Limitations

Hey guys. So I'm currently fermenting an IPA (my first brew ever:)), and will be dry hopping it in probably a day or so, and I've come to the decision of what to brew next. My brother is not a fan of hoppy beers, so I figured I would go for something of a different style, like a hefeweizen or...

    Homebrewer from Virginia

Yes, Austin. Sounds the same. Lol. Thanks for the warm welcome.

    Homebrewer from Virginia

Hey guys. I just bought a brewing kit from Northern Brewer, and an IPA kit from Houston Homebrew and am looking forward to getting started on it. My roommate in college brewed once and made an excellent beer, and I had always wanted to get into it, so here I am. I'll be out of town this...
