    I am using buckets. I did take readings after about 48 hours and then 72 hours and there was little to no change, but it looks like the nutrients have helped.

    sounds good. I'll check the gravity, and if I'm not satisfied I'll try pitching some yeast, but I'll start the yeast prior like the package says. I also grabbed some Yeast Energizer, so maybe some of that too if needed.

    It has now been over 72 hours. One of the brews, #1 with the Motts, seems to be going great! it's bubbling away happily. #2 with the WH Cider has still not bubbled at all. So what should be done?

    gotcha, well that's good to hear. I just didn't know if I needed some more temp control, or yeast nutrient or something. With the beer kits I did before, they would be bubbling like crazy by now typically. I'll give it a couple days and see Thanks!

    If you make it over to the beach on he east coast... In Melbourne you have a World of Beer in Viera, Coasters in Indian Harbour Beach, and Charlie and Jake's Brewpub. Melbourne is also home to the Florida Brewery home of most of the Florida based brews they do tastings.

    My experience is that they are extremely busy and will not return calls or emails. Best is to call till you talk to who you need to; maybe not every 30min but like every few hours to not be too much of a bother. They want to help, but are busy with the orders.

    Filling CO2, Where?

    I got mine filled at an Ace Hardware; I don't know if they have them in TN. You could also try sporting stores like Sports Authority or Dicks; places that sell paint gun supplies will fill CO2.

    So it seems to have worked. Last night I disconnected the gas, rolled/shaked the keg for like 2-3min, attached gas at 30psi, waited till I didn't hear gas flowing and repeated. I only did it 2 times so as not to over do it then set the gas to about 10psi. Now this is the first real homebrew...

    This. exactly. I think I'll go the quick route this time and by the time the beer is actually good in like 3 weeks my next batch will be ready to keg =) thanks all for the info. In the future I will definitely set and forget per everybody's advise.
