    Wyeast 1098 recipe ideas.

I just made a super strong IPA with that yeast. 7.5lbs of LME and 5lbs of DME, 1.5ounces of centennial @ start, 2 ounces of citra @ start, 1 ounce of Mt Hood with 20 min to go and 2 ounces of willamette with 10 to go. I could almost drink this one flat. Its been bottle conditioning for a week...

    Stuck fermentation

I guess I forgot to mention that it is just over 5 gallons. So, I think I will give that a try. Ive never made a starter before. would using a growler and a airlock work? What should I use for fermentables? I have corn sugar, will that work? What yeast should I use? I dont think I want to...

    Stuck fermentation

So, I really wanted to make a big beer and I didnt really do my math at the brew store. I got all excited and bought 7lbs of pale LME and 5.5lbs of DME. Did my boil and put it in the fermentation bucket. Got a OG of 1.080. Pinched my yeast (wyeast british pale 1098.) Did a test last week and it...

Apple Cider or pile of sticky glass?

I have done about 12 cases of hard cider in wine bottles/champagne bottles so far, and the wine bottles (although they are not designed to hold pressure) will hold some pressure. I have not had a broken bottle yet nor has one pushed the cork out. Id say that about 5 out of the 12 are wine...

    Apfelwein-based woodchuck idea

I had thought about doing something very similer but with bottling. I wanted to to take 6 gallons of fermented apple juice, add a 1.5 gallons of fresh pressed apple juice, bottle, then pasturize the bottles immediately. Has anyone tried this before?

    Cider not fermenting

Yes you can. Read my post above. That will make it work. The starter will produce enough yeast cells to get the job done. Give it a shot.

    Cider not fermenting

Make a Starter. 1. Get a fresh apple or two and put it in a food processer or juicer and make a fresh juice. 2. Put the juice in a quart jar, half gallon jug or something that is foodgrade. 3. Add a table spoon of regular sugar and then your yeast package with warm water. (this does need...

    Cider in large batches.

Has anyone ever used a larger fermenter to do massive ammounts of hard cider? My LHBS has a few 24 gallon fermenters and I'm gonna buy one to do cider in. I've been clearing a orchard that has been left to drop (the farmer would get 12 cents a pound when his cost will be 14 cents a pound)...

    getting your own cider

Its a good idea if you wanted to do a combo of different kinds of apples such as combinding a sweet apple (galas) with a a tart one (granny smiths) to make a sweet yet tart cider. Me and a friend have been clearing a orchard that was let to drop and have been getting about 2.5 per bushel (we...

Put a package of yeast designed for 5 gal in 6 gal of cider.

Sorry, I forgot to add that info. Red Star "Cote des Blancs" is the yeast I used. it says for 5 gallons on the package and I have more than that. Was just wondering if there is any negitive effects I might see in the cider.

Put a package of yeast designed for 5 gal in 6 gal of cider.

So I didnt really measure how much cider I put into my fermenters when I was dumping it strait from the press, but I did notice that each of my fermenter buckets had just over 6 gallons after I pinched my yeast. So, What can I expect? :drunk:

    Juicer question

So I have a juicer on the way (will be delivered on tuesday,) and the question came up. Do juicers smash the seeds and put anything bad into the cider? We are looking at putting thousands of pounds of apples through it. If so, it looks like a lot of cutting.

    Liquid malt question.

So I think I'll do 1 ounce of nugget for 60 and one ounce of willamettes at the last ten and see what happens. Thanks :tank:
