    Water profile advice

You probably live in an agricultural area. Your nitrate levels are in the unsafe range. (anything over 10mg/l is considered unsafe). We have the same problem where we live so we use nothing but bottled water for drinking (and beer making). If possible you should get the spring water tested...

    Extract brewer considering BIAB

Another bag for you to consider is the one I use: https://www.brewinabag.com/ I like it because it has straps sewn into the bag with loops at the top so it can be easily used with an overhead pulley or winch.

    Beersmith still Alive?

Here's what I have used for the past 20 some years. I have looked at some of the newer programs but since all my recipes are in PM and it still works just fine for me I haven't seen any compelling reason to change.

    Beersmith still Alive?

I still use Promash! I haven't gone to win 11 yet but I expect Promash to continue to work with it too.

Need advice on three-roller over two-roller grain mill.

I've had their 3D mill for 20+ years. It does a great job and have had no problems. I've had a few questions over the the years and Don has always been very responsive. Highly recommended.

    Baltic Porter

Sounds like you need to make your own. It's really pretty easy. I was able to do it and I'm a real klutz when it comes to anything like cooking. Here's a good thread on how to: https://www.homebrewtalk.com/threads/20-lb-of-sugar-and-a-jar-of-yeast-nutrient.114837/

    Baltic Porter

Ever consider using Candi Syrup (Products) in place of the brown sugar? Could add some interesting flavors.

Best Scotch Ale/Wee Heavy you’ve made

You might want to look at the Oskar Blues Old Chub Scottish Ale recipe here: Oskar Blues Recipes Old Chub has been one of my favs since I first discovered it about 20 years ago. I've brewed this a few times and it's pretty close to the real thing.

    Pressure fermenting Question

Thanks for the reply. I'm a little lazy, so if I can do less work and get the same results I'm all over it. It sounds like this would be a good candidate for an exBEERiment!

    Pressure fermenting Question

Curious why you say this? I ferment under pressure in a corny. I give it enough pressure to seal the lid to start with and set my spunding valve to ~15psi and let it go from there. My beer seems to come out at least as good as before I started fermenting under pressure and I don't have to...
