    It's been on my mind to make an IIPA exclusively first wort hopped with Centennial. Good idea or bad idea? [3.5 oz of Cenntennial gives 102 IBUs (calculated as 60 min boil) or 60 IBUs (calculated as 20 min addition) -- depending on the school of thought you come from.]

    Yeah, last night tried these gel food colorings that SWMBO uses for cakes: http://www.amazon.com/dp/B0000VMA16/?tag=skimlinks_replacement-20 A tiny bit on the tip of a toothpick turned 1 oz very pink. I'll dissolve some in vodka before adding at bottling. I think it will work well.

    That looks like a nice recipe. It seems like the perception with Citra is that it's best for flavor and aroma rather than bittering. Since Simcoe has a reasonably low cohumulone content, it makes sense to use that as your primary boiling hop. I'll have to keep something like that in mind...
