    Tips on AHS Hefe?

    Brewed this kit last Spring and kept the fermentation temps around 64 degrees. Turned out great with a pretty even blend of Bannana and Clove. This kit was a fan favorite and had everyone begging for more. Use the liquid yeast that was recommended with the kit.

    Inconsistent bottle carbonation

    I have gone to this approach as well. Each batch goes in the bottle for three weeks and then to the Frig they go for at least two days.

    I have had very good luck soaking in Oxicleen Free overnight and removing the labels the next day. I rinse the bottles well and then store until needed. When I need them again I do a quick power rinse and then sanitize with StarSan. After that off to the bottle tree they go. Never had a problem...

    full boil question?

    I steep on the stove using one gallon of water per pound of grain then add that to the 10 gallon pot to due a full boil. I usually start off with about 6.25 gallons. Works well for me and usually gets me very close to my five gallon mark when I transfer from the brew pot to the fermentor.

    Yuengling lager

    If you are stuck without Craftbeer or Homebrew, Yuengling's is a good beer compared to many out there. I especially enjoy the Black and Tan. Many here in Indiana are hoping to see Yuengling's migrate to NW Indiana. Would love to see Yuengling's in ballparks and stadiums in Chicago.

    We leave all of our beers in the primary for four weeks (minimum) and wait three weeks after bottling before we put a couple in the frig to cool down for our first taste test. Works great for us!

    2 weeks vs 3 weeks in primary

    With a Porter I would wait a minumum of 28 days in the primary. I have gone out to 6 weeks depending upon the receipe. After bottling wait a minimum of three weeks for them to carb up. (depands on the temps) I also wait about two days after putting some in the frig before sampling......Enjoy!:mug:

    NB Sierra Madre Kit.

    NB Sierra Madre is a very good kit. That one did not last long in my house. The minimum time you want to go from bottling to drinking is three weeks at room temps. If you open one early you are wasting a good beer. Patients is a virtue!:tank:

    Who needs a stir plate?

    I have to admit I was wondering the same thing until I starting using a stir plate. These things are great and it's also fun to watch the cyclone effect inside the flask. In all seriousness stirplates are the way to go (the yeast love them) and they are cheap especially if you make one.:mug:

    Starsan question

    I usually keep my five gallon batch for a about month without issue. This usually takes me from brew day through bottling day. In tap water it will turn cloudy very quickly. The cloudiness of the mixture is no indication of the potency of the Starsan mix.

    Brew Pot

    +1 on the Full Boils. I believe full boils are by far the best way to go. But, I would go no smaller than a 10 gallon brewpot with with a valve and thermometer. Don't forget the Wort Chiller. Life is so much easier now that I changed over to this setup.
