    Thanks guys! I'll be using light DME for starters going forward. I may do a test and brew this again using light DME and see if there is a difference with this brew using Amber DME.

    Thanks for the replies! My original question has led to more questions now. I've read several places that you should try to match the DME type to the style of the beer. IE: if you brew an Amber, use Amber DME. I assumed this was for flavor, not color reasons but you know what assuming does...

    I didn't think color was the reason you matched starter DME? I will cold crash and decant too. Regardless, I've already made an Amber starter. The question is: is it ok to roll with that or should I make using light, etc?

    Bottled up the Haus Pale Ale after 4 weeks in primary. Hit FG perfectly. The sample tasted great. I can't wait for this one to bottle condition as it may be my best brew yet. Jeff

    Don't feel bad, you are not alone. I went through the exact same thing several months ago. I now use 2 thermometers while brewing and constantly check one against the other.

    Bottled this one up last night. Hit the 1.010 Final Gravity target...started at 1.051. Didn't appear quite as orange as other pics posted here but I'll let it carb in bottle for 3 weeks then sample and I'll post pics. Tasted pretty good, excited for this to be ready!
