Fruit beer too tart, backsweetening and lactose?

Guys, thanks. Y'all are awesome. Maybe I'll toss it in a closet and let it get happy for a while.

Fruit beer too tart, backsweetening and lactose?

Hello! Made a basic clean ale, added a bunch of strawberries, and definitely forgot about it for too long. Fermented out too much, so now it's WAY too tart. It's in a keg, so I can mess with it. I'm thinking about turning it into a strawberry creamsicle and hoping you wise folks can help...

How many Bottles do you have?

215 12oz 50 22oz with some random grolsch bottles in there too. I actually primarily keg, and depending on my social calendar I'll actually go from keg>bottle for whole batches fairly often. Bottling really isn't the end of the world, kegging does take 1/54th of the time, though.

    Return of the krausen!

...or was it Kracken? Anyways, I brewed an AG IPA a month ago, after a week it tasted amazing. It's been hanging out between 60 and 70 degrees (I live in CA, who'd have figured that would happen during winter?) Now that I'm brewing another to pitch onto it's yeast, I went to take a look at it...

    Keg: Good, Bottle: Flat.

I had a wonderfullly carb'd beer in a keg, used a homemade filler to fill bottles. Lo and behold, everything went flat. I obviously messed up, but the beer isn't contaminated and still tastes great (except that it's ...flat). Here's the question: Is it worth opening all the bottles...

I might be an idiot. Forgot Hops

Brewed a higher gravity belgian a couple weeks back, forgot .5oz of the .75oz hop addition @30 mins (they were in different bags). I remembered both the @60min and @5min. I realize that only time will tell if this will screw me and I should probably relax, but was wondering if dry hopping the...

    Alcohol-y finish.

Hey y'all, I know (because I've searched already) that an alcohol-y taste is usually due to not having conditioned enough. However, I have a lovely liter of a bastardized version of Water into Barleywine (still tasty!) in my belly, I'm posting this anyways. Preamble: xSpeaker made cider...

    Hop reserves

I'm looking at http://www.hopsdirect.com/, and I'm thinking of just buying a few different kinds of hops and depleting the store of 'em as time goes on and I brew more. The Questions: -How long will hops last in the freezer? I figure if I can use 1/2lb before they go bad I still cut my costs...

    Making my own immersion chiller?

With the counterflow I worry about cleaning the inside-- is there a way to be sure that it's clean // no little hop bits are living inside?

    Making my own immersion chiller?

I'm fantasizing about my 3-tier setup that's currently in the works (mostly in my head until I put in my credit card number), and was wondering about the difficulty/cost effectiveness of making my own immersion chiller. Most importantly: is it cheaper to buy or make one? Next importantly...

    yes, another burner/manifold question

I'm just starting a 3-tier setup, and these burners don't have stands attached. Do you already have stands, or are you somehow building the burners into the setup?

I'd probably be in for 1-2 pin lock kegs depending on shipping, and definitely a pliny pack.

    Beginner's Question - Soda Syrup + Seltzer Water =?

Hey all, I decided to make a corny of soda water by just kegging tap water and hooking it up to a co2 tank. I figure that $1/gallon of delicious bubbles is totally worth it in between beers. The question: Would it be possible to make a syrup concentrate (I'm thinking ginger/citrus) and...

    Bottled vs. Tap Water

Jim-- I think we actually spoke b/c of carboys on CL. Small world. I use a bucket for primary, so I put the 10lbs of ice and about 1.5-2.5 gal (depending on how much evaporated during the boil) of cold water into the bucket right before my boil finishes. After that I dump in the wort and stir...

    Bottled vs. Tap Water

I just put my 4th brew into primary (amped up Hoegaarden clone ~6%abv), when I realized that it might be time to reevaluate using bottled vs. tap water. I live in Berkeley CA where the water is, frankly, delicious. Beats the hell out of southern california water. I don't think it is hard...
