    My only major concern at this point is that if I don't change times or hop amounts from the recipe, then according to BeerSmith I'm going to have over 300% of the target IBU... That seems a bit extreme even if I do get flavor and aroma right?

    So then would the best solution be to do a single application of .5oz hops, and boil for 50 minutes (which is close to the total number of minutes the original recipe calls for?) That way the bitterness comes out the same. Or would that then mean that the bitterness would come out the same...

    I would say, almost definitely. But be aware that not all mexican coke bottles are the same. I actually managed to get ahold of some bottles of pepsi from my local mexican supply store - they're in these really cool swirly bottles that look like those off of back to the future 2 in the diner...

    Wouldn't the vessel/2 liter bottle ultimately reach equilibrium though? If they could carbonate the liquid at 50-60 psi, put it in the bottle, and then fill the headspace at 30 psi - but have the co2 remain in the liquid at the same pressure... Then I could see why shaking it would release it...

    Stick with it and you'll get carbonation. It took me several tries with soda, and I honestly don't know why. And I certainly never opened one and had it come spewing out like I'd read about. Even now that I'm force carbing @40psi I don't seem to be getting tons of pop, even though I'm happy...

    As far as re-using, I'm not sure. I don't know if I'd go so far as to claim a bottle a day to be 100% OK, but I would certainly argue that a bottle every other day isn't going to hurt. This is based on my own analysis of published research and experiments from the last 60 years available...

    I too am quite doubtful about the carcinogenic properties of Safrole.
