Sounds great, let us know how it goes!

    Sweet Stout Deception Cream Stout

Secretlevel, I use 7 lb, comes in about right, there's a lot of other grain in there, plus lactose, to get the OG up. But you know your system, if you need to bump it up a LB, do it. This is a great recipe, you'll love it whatever you do.

12-12-12 Wee Heavy Swap and Critique Thread

I hate to admit it, but I think I have one or 2 left as well. I'll take a picture and post some notes

It will be black as motor oil. It looks brown because all that yeast in suspension reflects the light. When you report back with your tasting notes in a few months, post a pict!

Force carbing by the book but still flat

at 30 PSI, you'll have to shake VIGEROUSLY for 2 minutes, Donkey Kong style! You didn't say, but I'm guessing the beer is at serving temperature? if so, just keep shaking, and yes, let it rest for a bit, off pressure.

    Hard Lemonade

You can bottle it anyway you like. If you back sweeten it with fermentables, you will make bottle bombs unless you kill the yeast or keep it cold

    Hard Lemonade

I guess you could, not sure why though. I haven't don't any really long aging on this, but it doesn't seem to get better with the time I have put on it. It does clear up though. If you let it finish all the way out, it's pretty dry, like white wine. I like to let it drop to about 1.025, then...

    Sweet Stout Deception Cream Stout

You could just use the whole .5kg, you'll add about 6 points to the OG. increase of just over 0.6%ABV. Probably won't make that big of a difference to the flavor. Honestly, I don't usually brew with extract. I've made this beer many times all grain though. I think either way you'll end up with...

    Sweet Stout Deception Cream Stout

Hey OhCrap, I would suggest using 0.4 lb of your extra light DME, so it keeps the OG the same. I don't think it will change the flavor too much.

12-12-12 Wee Heavy Swap and Critique Thread

Hey Steph, thanks for the reviews, and for being honest! Yeah, barley wine, but maybe the bottle I sent you somehow got infected. I've been drinking one every few months, and while there's only some bitterness still remaining, I haven't had one I'd call sour. Was it clear? I'm having one right...

12-12-12 Wee Heavy Swap and Critique Thread

Many apologies to Stephonovich, JuanKenobi, and Smokinghole. It's been a crazy month at work, and I haven't gotten your packages shipped. Just today I boxed everything up, printed off shipping labels, and will take them to the UPS store if they're open tomorrow, or Wednesday if not. In the box...

    12-12-12 Wee Heavy Recipe Formulation

Ok, let me test one more tomorrow. It wasn't any off flavors, but just a reduction of flavor, if memory serves right from earlier this year. I could also just be overly critical, when I read what others write about their beer, it sounds great and I start to wonder about my own. When's the cut...

    12-12-12 Wee Heavy Recipe Formulation

I was planing on being part of the swap, but I just tasted a bottle from the stash. It's been at room temp all year, and is past it's prime. Should've invested in a walk in cooler...

    Hard Lemonade

Never had a problem, but you do need to degas, unless you want to wait a long time

    Graff (Malty, slightly hopped cider)

I've done straight cider with the White Labs version of that (WLP300), and it turned out great, better then the other yeasts I've used

    Chicago airport beer?

Sweet, thanks for the reply. I'm checking it out now, they for this Belgian pale with a wild yeast... Pretty good!
