    East Coast Yeast ?

    13 gallon French oak barrel

    So my wife just splurged and got me a new 13 gallon French oak barrel from Midwest homebrew supply. Do I really need to do the barrelkleen thing or can I just do the water soaks to get the wood to swell before I filler up? Thinking about doing a stout then maybe an ipa before bugging it up...

    How much carbonation is too much for a reg. bottle?

    I want to brew a strong belgian ale and bottle it instead of keg. What is the highest level of carb. a reg bottle can handle. I would like to have it around 4 volumes but dont want bottle bombs. Any experience with this???

    Stuck IPA...should I bug it up?

    Brewed an IPA about two weeks ago that got too cold one night and pissed the yeast off. The beer has been stuck at 1.023 for over a week now and I'm thinking about adding some dregs from my favorite Jolly Pumpkin beer. Should I do that or just buy a pure culture of brett?     My starter is doing weird things...

    A leaf fell in while cooling!

    Just brewed a double IPA this morning and while cooling a leaf floated in the garage and landed in my wort. It was prob. around 120*F. Hope this still turns out good! Gotta get the beer active quick!!!

    carbing each bottle

    I usually keg most of my beer but do like to have a few around to let them age out or to take them places or give them away.     Tell me I didnt just waste 4 hours!!!!

    So brew day went perfect... untill I dumped five gallons of wort on top of .25 - .5 gal of star san (diluted as recommended). So here is the infamous question: Is it ruined? or is it worth fermenting and eventually safe to drink???? Thanks everyone.

    How much yeast for a 2.5 - 3 gal batch?

    I am gonna be doing a run on four or five mini batches and don't want to over pitch. I usually do a 1 liter starter for liquid yeast or a rehydrated packet of dry yeast for 5 gallons, would these amounts be too much for a 2.5 - 3 gallon batch???
