Siebel WBA Web-based Concise Course in Brewing Technology

Siebel has a course for running/ starting your own brewery that would probably be more useful. I just finished the concise course and found it useful and interesting if a little overpriced.

On your second point Im not totally sure I got to carb after fermentation but I have a good pipeline build up so I like the extended conditioning time to let me get to bottling (I'm a sucker I keg THEN bottle). For the third...

    Aging a Marzen on oak

I say go for it, I think a light oak character could compliment a marzen nicely. I don't know what you batch size is but i would keep some un-oaked on hand to blend back into the oaked beer incase the flavor is too strong.

    Question about isomerization

I dont think wort sugars need to be present for the isomers to form. As far as i can tell the boiling action is what rearranges the alpha acid molecules.

Frozen in my Blichmann Fermentor after fermentation

I used to regularly freeze the valves in my fermenator with no I'll effects. I would thaw them with a hair dryer with no I'll effects. Never froze the whole thing solid though.
