    Try 6 weeks. Unless something went wrong, it should be perfect. It ages really fast. Unless you tried to up the gravity.

    Not by Thanksgiving. Joe's Grape (pyment) is possible, but not the JAOM Joe's Ancient Orange is something you could ferment this week and drink in March.

    It is frowned upon, unless you used ingredients with antioxidant properties. In this case, with 1 pound of honey and 2 cups of brown sugar, well, there's really nothing to save it now.

    Search for "Joe's Grape Mead" It's the only tried and true quick mead I've ever done. There are other good quick meads out there, but "quick" in mead terms usually means 6 months. Joe's Grape is the only one that is "as advertised" on quickness and drinkability. Even Joe's Ancient Orange...

    Ive had some "poppy" JAO that I aged in flip-tops. If I were you, I'd stabilize it with both campden and sorbate, just to be sure.

    Patience. Get a separate bucket and/or carboy so you don't rush it because you want to make another batch of beer.

    I'm following a Keller recipe now that calls for "Acid Blend" and my LHBS gave me the same thing you have, citric, malic, and tartaric, in even proportions according to LHBS.
