    How ridiculous is this?

    I have not ever drank HOT V8, but the keg that just kicked is HOT, It will tingle your throat and lips....My brother says its like gasoline! The aroma is Hot!! The steam coming outta the kettle about burned my eyes! I find it quite tasty!

    I have made several with EC-118 that went to 15-18% with just a bit of nutrient and nothing more.......swirled the carboy once a day the first week! Ec-118 Is hungry!

    Well............This Damn EC-1118 is still hungry! It took four days, but it's up to it's old shenaneginns! Bubbling away! I might have to let this finish out, rack again and add more apples!!.....of course i'll taste it too see how it is! Yeah with an O.G. of 1.o92 I shoulda figured it...

    Lowest Possible Final Gravity

    haven't had a mead finish above one yet........all were .0990 or less.....i think a 1 gallon batch i made with some Hawaiin honey hit .0988 or less i've used EC-118 for all but one so far!

    no signs of activity!?!? Now im concerned that with the extra honey and water I added it will just be a overly sweet/diluted wreck? also, I swirled the carboy gently to get the added pure honey dissolved so it wasn't just sitting in a blob on the bottom.

    2.5 lbs/per galon yes! I realized after the fact that yes most of the apple flavor would be carried away by more fermentation......I am fairly confident however that is is "done" for the most part fermenting! I guess I should get out of bed and go check!!!!

    Fermenting Temperature

    what is degassing? I have been swirling/shaking it every couple days and thats seems to drive out huge amounts of co2 up to the surface and the blow off tube goes nuts for a few seconds........Is this degassing?

    Buckwheat Mead

    Yeah i know.....i was surprised as well!! I checked it several times! I had a another one gallon batch that went down to 1 also with EC118. I'll let you know what this current one gets down to...so far EC118 is the only yeast i've used.

    I had a mead that started with a similar s.g. and fermented all the way down to .990!! I used EC-118 and have for my last several meads as well......just made one last night, 3 gallon batch, s.g. was 1.090 so im expecting this one to ferment out dry as well!
