    Yeah, I don't think I fermented too hot and I'm sure I cooled the wort down good but somehow my attempt at a cream of three crops ale came up tasting like bubble gum today when I was bottling. We'll have to see what it's like chilled and after a few weeks of conditioning but I'm worried.

    I haven't used irish moss in any brews since I don't care if it's a bit cloudy. My concern is mainly with color. It didn't seem to have that golden color associated with BMC's when I put it in the fermenter.

    Ok, so I know a higher alpha acid hops makes a more bitter beer, but what about hop flavor? Does that get stronger as well or are there any other differences? Does anyone know of a good chart for general flavors achieved from different kinds of hops?

    I'm going to throw out there that you should hold off on dry hopping too. I've been doing the 5 gal batch with 1/1/1 oz at 60/15/5 and haven't been upset with the hoppyness yet so you might be plenty pleased without dry hopping, at least for a while.

    Your goal was good beer, your drinking good beer, and somehow your perceiving a problem? I haven't gotten my cycle out to 3 weeks in bottle yet, hell I just got it out to 2 weeks, so maybe I'll change my mind down the road but I say drink it when it's good and you'll live a long happy life.

    Look Ma! I made Beer!
