    100% peat smoked malt? Yes!

I recently brewed a Strong Scotch Ale with 100% peat smoked malt. I just added it to the recipe database. I'd love comments. https://www.homebrewtalk.com/showthread.php?t=556227

Scottish Heavy For Peat's Sake Strong Scotch Ale

Significant smoke and peat on the nose with detectable malt and bread. Quite malty flavor with strong smoke and peat; also quite bready with hints of warm biscuits in the morning. Finish is smoky and peppery and does indeed remind me of Islay Scotch (something like an Ardbeg, Laphroaig, or...

Lambic in an old wine barrel?

I have the opportunity to obtain a 60 gal wine barrel that was used to age cabernet sauvignon. It will be emptied right before I can pick it up. I've never made a lambic before, but my goal is to use this barrel to age some lambic, take out 5 gal or so at a time and replenish it when I do. So...

Breweries, brewpubs, and general beer in Tulsa, OK

Headed to Tulsa, OK soon. Anyone know where I can find great beer selections? Brewpubs would be nice. Or breweries I could tour. And, of course, stores with a great beer selection for me to go nuts over.

Dubbel Trouble, Trippin' on the Tripel, and Quadrupel Threat

So I got on a Belgian kick and decided to brew a dubbel, tripel, and a quadrupel over three days (yup, in a row). All use Pilsner malt as the base and candi syrup. They are currently still fermenting (been doing so for a bit over two weeks). I've been checking these brews almost every day and...

    Comments on this IPA recipe

I currently have two "house" IPAs that are very different and am looking for another nice "citrusy" and "piney" IPA. I'm thinking of this recipe to start with. Any comments/suggestions? Thanks! Overdose IPA ------------ Batch Size: 6.00 gal (8.49 gal preboil) Estimated OG: 1.070 SG...

    Oh, Simcoe, where art thou?

Looking for a crap-pile of Simcoe hops so that I don't run into the problem of running out when there's a shortage. Anyone know where I can get some?

    Belgian Tripel and attenuation

So I brewed my first Belgian Tripel on 8/19 (recipe follows). OG was 1.078 SG (was trying to hit 1.080 but I was getting used to my new HERMS system). Using WLP500 and expecting about 75% attenuation. I hit an FG of 1.022 SG after 17 days and kegged. It's been slowly force carbonating, and I...

    Fruit Beer Peach Wheat

We're famous for our peaches where I live, so I decided to make a peach wheat. Many people say that using peaches doesn't give a pronounced flavor in the beer (and so they use apricots, for example). I wanted to use peaches so I did (it just took a while to get the flavors and aromas I...

    Brother Cain's IPA

This turned out to be really tasty! It needs a little bit of conditioning (for me in the keg, about 3 weeks). Cascade comes through nicely for a nice piney, citrusy bite. It was supposed to be an IPA (at least 1.056 OG), but I didn't hit my OG so I called it !IPA (for the computer science...

    Noble hop experiment

So I decided to try something. I recently brewed EdWort's Haus Pale Ale and was surprised at the lagerish characteristics. It uses solely Cascade. So I decided to try the same (or very similar) recipe but using each variety of noble hops. So for the first batch, I'm going with Saaz. I'll...

    Lagering in serving corny keg?

I intend to rack my lagers today to a carboy and lager for a month. I would then rack to kegs with gelatin and carbonate. But I thought why not rack now to the kegs, add gelatin (now), and lager for a month. I'd then carbonate those kegs. Anyone try this?

    HERMS coil location

Wondering if anyone puts their HERMS coil in the MLT as opposed to the HLT. I figure putting it in the MLT would allow me to clean it easier (hot water form the HLT goes inside as opposed to sweet wort). Comments?

    Thinking about RIMS

My car needs some. Just kidding. I am looking into a few designs. Any comments/suggestions?

    Mexican Wedding Lager critique

So my brother-in-law wants me to brew a Dos Equis lager type of beer (not the amber Vienna lager) for his wedding. Here's what I came up with. Any critiques or suggestions? Batch Size: 11.00 gal (14.00 gal preboil) Estimated OG: 1.040 SG Estimated FG: 1.010 SG Estimated IBUs: 15...

Any input on this DIPA recipe?

I figure this will be tasty. Plus, it's my first time trying first wort hopping. Care to critique? Hop Machine DIPA ---------------- Batch Size: 6.00 gal (8.88 gal preboil) Estimated OG: 1.085 SG Estimated FG: 1.020 SG Estimated IBUs: 129 (Tinseth) Estimated Color: 11 SRM Brewhouse...

    A Right Scunner Scottish Ale

A few notes: Toast 1 lb Golden Promise for an hour in a 350F oven. Crush and mash with other grains. This will increase the SRM a bit, but the estimation should be pretty close. Boil about 2 qts of the first runnings separately and reduce to 1 qt. Add with 5 mins left in the boil...

    Conditioning a barleywine

I plan to brew a barleywine (1.105 OG) tomorrow. With the second runnings, I'll make some sort of APA/IPA/Brown Ale. In any event, I plan to dry hop my barleywine after aging and then carbonating in the keg. I have several alternative plans; which would you recommend (after primary...

Cabane à Sucre Nut Brown Ale

At my wife's request, I made a nut brown ale. I wanted something different so I added some maple sugar (granulated) with 15 min left in the boil. I wasn't sure how this would affect flavor or aroma. I'm glad (and a bit surprised) that I can detect a slight maple aroma and flavor in the latest...

SA Latitude 48 IPA and Noble Pils

I've noticed that the Sam Adams Latitude 48 IPA and Noble Pils both seem to use the same flavor hop. I'm inclined to think that it's Spalt Spalter. Anyone care to confirm or give their opinion? I've made the Noble Pils before and it was close but not perfect.
