What size batch are you trying to make? I would boil as much water as possible. For instance, if yo are making a 3 gallon batch, and you jave capaicity to boil all three gallons + LME + Hops, go for it. Then cool the wort, and pitch the yeast.
I don't buy that...The Guinness in the U.S. is brewed in Dublin. Just like the stuff for Ireland...

Just because you don't see bubbles doesn't mean it's done. Take a gravity reading over a few days to make sure. What temp is it fermenting at now?
I would leave it at least a couple more weeks...
Personally I think Guinness Draught is wonderful. To not like it is somehow just wrong. It's easy drinkin', creamy, and tasty.
It's my favorite light beer by far :)
