Most homebrew shops should carry lactose. I have used between 100-200 grams per 5 gallon with good results.

Use some lactose to sweeten it up. I have found that about 100 grams/5 gallon is very nice to take the edge off.

I think you might blow the bottoms out of those jugs. I don't think they are made to hold pressure.

When I use my Phils I add the strike water and always hold it down with my spoon while adding my grains. The grain seems to hold it down. Never had a problem.
