    Coopers kits

In general the less sugar and the more dme u can use the better. You may want to add a second yeast packet if you replace all the sugar though. Some yeast nutrient is also a good idea either way. And if you still find you're getting a "kit taste" you'll likely want to get some grain in...

    NanoBrewery build

If you boil Honey it loses most if not all of its flavour. I would try adding it after the boil and steep for 20 min or so if it were me, either that or rack onto it for a secondary.... I've not used maple syrup though.

new home curse...6infected batches and counting

I have heard of air vents in brewing rooms causing situations just like this, is there forced air in your apartment. Edmonton should have supplies somewhere you could also try a "regular" batch as its all brewhouse kits that have gone bad if I read that correctly? Are you using a different...

    Knockout Punch sharing

Knockout cutters are also an option, it's basically a whole saw made for metal. They don't last forever like a slugbuster set but they are fast and easy, as long as you have a drill. If you take your time with them they do last pretty good (turn it slow!). I think the Ideal set is pretty...

    Hops for a piney IIPA

I read somewhere that real pine, unlike spruce, is not good for your health. So I think big hops are the way.

    NanoBrewery build

Wow, what an incredible read. I don't know how you've managed to raise two children on your own, work a regular job and keep this brewery marching forwards-but my hat is off to you sir! You give those of us in soul sucking 9- 5 jobs hope that some day... Best of luck and I'll be eagerly...

Please provide comments / suggestions for this X-Mas Ale

You are out in experiemental territory, that's a good thing!! If the spice ratio is off you may have to let it age and mellow. But nothing looks too crazy to me. How many IBU are you getting with those late hops? You do want to make sure you're at least balancing out your malt. Also I...

    Pilsen Callao Clone

Pilsen Callao is a light adjunct lager. Not all that different from a carona if my memory serves. You may find a carona clone out there... though most homebrewers don't bother with theese kinds of beers as they are tricky to get right and fairly bland... also you can just buy a coors light and...

OK I screwed up - can I fix it?

Normally one would add it to warm water to dissolve. I would gently stir it until the lump of honey (presuming there is one) has blended in.

    Ale temps for Lager Yeast

I have had success with this, you just need enough plastic bottles. Adding salt to the water in the bottles should help a little as well.

    Going to Canada

If you can find any Paddockwood beer I'd give it a shot. The 606, they're A IPA, is definatly worth a taste imo.

AG Spiced Nugget Oatmeal stout advice

I was planning on mashing the oats and smoked malt with everything else... are you suggesting that I mash them seperatly? I like your "tea" idea. does a half tbsp sound about right to you?

AG Spiced Nugget Oatmeal stout advice

Any veteran stout makers out there that can throw some feedback my way? The wife really wants cinnamon in there so was thinking 1/2 tbsp at 10 min? Recipe: Nugget Oatmeal Stout Style: 13C-Stout-Oatmeal Stout Recipe Overview Wort Volume Before Boil: 28.00 l Wort Volume After Boil: 24.00 l...

Labatt Blue clone, in ale form?

Nottingham yeast fermented under 18C would do the trick for you. But IMHO it takes a couple months to really taste clean and pick up those lager characteristics.
