    Thanks man - big help!

    GF Grain Equivalents

A mix of chesnuts and sorghum works great. I've found if I make a chestnut beer with corn sugar and a touch of sorghum it really improves the quality. This was a great post by the way. I happened upon the chestnut / barley numbers 6 months ago and that's why I experimented with them. Pretty...

    GF Brewing with Chestnuts

Glad the beer worked out Gonoles! My double IPA is good, but a little too sweet for my taste. It's also a bit too dry, so I think next time I make an IIPA I'll add back in a bit of sorghum for body. It's definitely drinkable though for sure! My Black Lager (my first chestnut lager) is getting...

    GF Brewing with Chestnuts

You guys have again been busy! Sorry been traveling. SexPanther - definitely cold crash. It has worked wonderfully for me. I don't even have to use my 1-micron filter when I crash to 30-ish F for 48 hours. Also just have to mention that the pectinase enzyme worked incredibly well. I have a...

    GF Brewing with Chestnuts

Wow you guys have been busy on here!... Lee, you're getting good press from my post. I hope I can still source chestnuts from you and they're not sold out!... Maybe I should have kept my mouth shut! :) I'm looking forward to trying the chestnut meal you sent. In any event, I have a chestnut...

    GF Brewing with Chestnuts

Yeah both beers I brewed this weekend were pure chestnut brews (well with corn sugar...). Both my IIPA and my Black Lager are fermenting actively now. The Black Lager does look great... we'll see how it turns out in about 4 weeks when lagering is complete. The IIPA should be ready in a couple...

    GF Brewing with Chestnuts

Just put my black lager into fermentation. Those dark chips make a nice sweet wort! It will come out with a lighter color than it should though, I can tell already. I could keep it in the right color range, but that would probably keep the OG a little too high for the style, so I'm going with...

    So Happy to be Here!

Welcome noontime. I'm probably too new here to welcome you properly, but I will anyway. I've been GF for a year or so now and have brewed maybe 15 or 20 GF beers now with varying success too. Look forward to hearing about your experiences.

    GF Brewing with Chestnuts

FYI to you guys... I'm brewing two beers today. One with dark roasted chips to make a schwarzbier, and taking another shot at an IIPA to improve on my previous pretty good one. I'll be experimenting with the pectinase for clarity in the black lager as well as some CaCl2 to assist the...

    GF Brewing with Chestnuts

Thanks Lee - I emailed you. You might want to take at least your cell num off of this post. Just a friendly tip! :)

    GF Brewing with Chestnuts

Thanks Lee - that is helpful! The chips will be lighter than I expected in the end. As an aside, I'll have to dig into my notes but I once saw a color darkening adjunct that I believe is gluten free and might work in this case. It was (is) rumored to be used by the Spoetzl brewery in Texas to...

    GF Brewing with Chestnuts

Lee - thanks for all of the info on here about your chestnut chips. Do you have an estimate of degrees lovibond for the color of the levels of roastings you offer? Specifically I'm trying to create a Schwarzbier recipe, but am not sure of the color I'm going to get out of the dark...

    GF Brewing with Chestnuts

Congrats! Let us know how it goes. I had similar impressions of the chestnuts the first time I brewed with them. It just all seems so similar to an all-grain process using traditional grains. Glad to have you on board the chestnut GF train. Hopefully some others can get on board too and we...

    GF Brewing with Chestnuts

Great info Lee! Thanks. I will try the pectinase next time around. I found with one of my batches that it cleared up beautifully when I took the temp down to 29-32 degrees just above the beer freezing for 3 days prior to kegging. That beer is crystal clear.

    GF Brewing with Chestnuts

I think it sounds promising!... and I think you're right about the honey becoming pretty much straight fermentable after a 60 min boil. I have read that though I have never brewed with honey so I can't personally verify. Glad you're doing a 10 gal batch with that amount of chips.

    Chestnuts: my GF-brewing God-send...

I guess I should clarify. I was using the light roasted chips for the first time and attempting to make an "american cream ale" with some german saas and hallertau hops (had on hand so subs) and US05 and it came out as a drinkable wheat-like brew. Not what I expected. It is certainly not...

    GF Brewing with Chestnuts

Wow - how did you come up with the 20lbs chestnut chips & 5lbs honey for the 1.06 OG? Are you talking about a 10 gal batch instead of the 5? I'm not being critical, but in a 5-gal batch it looks to me at a glance like you're going to be making a huge alcohol content brew. It looks much higher...

    Chestnuts: my GF-brewing God-send...

It will be interesting to see Lee's response to this. I've thought about using ~10 lbs of chips mashed for a 5gal batch just to see what a pure chestnut brew tastes like without the sugar but haven't quite gotten the nerve yet (for the $$). Once I do a couple more brews I might take a stab...

    GF Brewing with Chestnuts

Good luck - let me know how it goes. I think you'll be pleased with the complexity and character... I was. FWIW I just kegged a chestnut american cream ale that uses Lee's lightly roasted chestnut chips rather than the medium roasting. It tastes strikingly similar to a wheat beer, which is...

    GF Brewing with Chestnuts

One more thing... I've been thinking... I've made 5 or 6 batches now with the chestnuts and all have had at least a bit of sorghum. However, I'm thinking that I'm not really sure the sorghum is adding much other than off flavors. I think my next batch will not have sorghum in it. Just thought...
