    Historical Beer Names

I've been researching old breweries in my area. One in particular, the Darmstaetter Brewery, piqued my interest. According to what I can find, they brewed 4 varieties of beer there, Pilsener, Waldbrau, Tafel and Bayrisch. I wanted to figure out what "styles" these were. Pilsener and Tafel...

    Ever Miss a Hop Addition?

So, I brewed up a Marzen today, hops were supposed to be 1 oz Tettnang @ 60, .5 oz of Hallertau at 30, and .5 oz at 15 minutes. All went according to plan, I thought, until after I had it in the fermenter and found my last .5 oz of Hallertau on the counter. Grrr... So... This was to be...

    Oaking Lighter Ales

The wife bought me some medium roast oak cubes for my birthday. I've never oaked a beer. I wonder though, what some of the "lighter" ales, like Kolsch or even Hefe would do when exposed to oak. It seems that everyone is putting their bigger beers on wood, but I'm not hearing anything about...

    Pomegranite Kolsch

So... I've been brewing a lot of Edwort's Kolsch and I've been thinking that it would make an excellent platform for a light fruit addition. Has anyone out there tried pomegranite in a brew? What are some of your experiences when adding fruit? This would be my first time.

    Has anyone tried this?

I own a 7 cubic foot chest freezer that after only three years of service has up and quit on me. It doesn't look like I'm going to be able to repair it for less than the cost of a new one. So while I've got the go ahead to buy new, I have my eye on this broken one as a lagering cave, at least...

How long is too long? (I know it's vague, sorry)

I brewed up Edwort's BeeCave Kolsch about 3 weeks ago. I followed his process to the letter, and intended to brew up his BeeCave Oktoberfest Ale and toss it right on the Kolsch yeastcake as he has recommended (other posts notwithstanding). The problem is that I had some sudden financial...

Hoping for advice on first partial mash recipe...

Hi! I've got two all extract batches under my belt now (about to bottle the second and more or less enjoying the first) thanks to a Mr. Beer kit the wife got me for my birhday in early December. I've read How to Brew, as well as a couple other books, I've read alot on the forum, including...

    Hello From Snowy Michigan!

Greetings all. My name is Joe, I'm new to the forum and new to homebrewing. The wife bought me a Mr. Beer for christmas, and I've been doing A LOT of reading since. I see that this is a great place to learn, so I'll be lurking quite a bit, and asking the occasional question. I've already read...
