Anybody know if it would be pointless to do this with a single infusion? I don't have the capabilities yet to do step mash temps. I really want to clone this beer though.
I never said I was trying to call it a new style or make a new style. I just wanted to do something different for a change.. I don't see why you have such a problem with what someone else wants to do with their own homebrew. I guess you missed the fact that I said there was a little dark malt...
Well on mine I was basically going for a trick of the senses. I used Carafa III de bittered in a small amount and didn't add it till about 5 minutes left in the mash. So, mainly it was just for color. There is a small amount of dark malt flavor but mainly it is what the name describes. A black IPA
I did a sublimely clone (mainly grist bill) last month but did about 1.5 times the hops and used F.F and Amarillo as flavoring and dry hop. Turned out very good.
When he says he adds the bacteria what does he mean? I thought brett was the bacteria. But he says he adds brett than a couple months later adds the bacteria?
Is 3/4" wood not big enough? That is what I just cut. I haven't assembled yet. I am going to glue foam insulation to the wood so hopefully that will help. The wood cost me $50 so I really hope 3/4" will work? Thoughts?
If you do it right for a long time. I popped open a bottle of one 7 months old and it was still carbed fine. The beer wasn't as good because it wasn't supposed to be aged but it was carbonated. The trick is to not lose much carbonation while bottling. Get the beer carbed in the keg how you want...
I will be at the KY brew off as well! I actually live less than five minutes from the brewery. Maybe I'll see you out there and can get some tips for my build. I am about to get it started in about a week. Do you know what you are going to brew yet for the competition?
How is the freezer working with the weather stripping? I am about to build one of these and like the idea of not attaching the collar at all, just seems easier. Does it provide a good seal? Also, what part of KY are you in?

What are the dimensions of the wood used for the collar (length of each of the sides)? I am terrible with wood work (never done any actually) so I will probably have to get someone to help me with that but would like to know how to tell them to cut it..
