    My 1st Cider

I think OP was wondering about using cane sugar to prime with..Priming with 2 lbs of sugar might be a tad too much..:D What lumpher is referring to is during initial fermentation he adds 2 lbs of sugar to 3 gallons of apple juice to boost the alcohol level up to 11-13%. Unless, I am...

    My 1st Cider

Someone with more experience can correct me, but I have found that during the first few days of active fermentation the difference can be as great as +5 degrees in the fermentor vrs the h20 bath due to the heat created during active fermentation. Once fermentation starts to slow down, my temps...

Holy sweet mother of all that is alcohol. Woodchuck Fall Seasonal?

I did remove the sticks out of the wort, using sanitized tongs. I left the cubes in the primary for the whole two week primary fermentation. If chips react quicker and give off more flavor than cubes, I would try that. I did not want the oak to be dominating; I wanted it to be in the background...

Easy Stove-Top Pasteurizing - With Pics

mattib, I bottled mine cloudy and it cleared within the six days it took to carbonate the bottles. Did you use Pectin Enzyme in your cider? I did and even boiled 1/2 gallon of juice with some cinnamon sticks and mine still cleared ok. Also, did you use store bought apple juice or fresh Cider. I...

    Finishing Cider Options...?

This is what I am doing for my cider. Pappers did a great how-to on Pasteurizing with a hot bath. You pretty much bottle when you hit the target OG (read residual sweetness). After a week or so of conditioning, test for carbonation, then pasteurize to kill the yeast to prevent bottle bombs. It...
