    What kind of FGs are you guys getting? I've had this in the primary for just under 2 weeks and am sitting at 1.022, which seems a little high. (Hydrometer sample tasted good though -- nice smokey flavor coming through.)

    You're essentially right, but also be sure to think about how you are going to cool 20 or 40 gallons of wort after the boil. I doubt that an immersion chiller would be effective with that much volume, so you'll need a counterflow chiller, as well as some method to get the wort from the kettle...

    I did an IPA a few weeks ago and just threw pellet hops into my secondary. When I went to bottle, I cut the foot out of a new pair of the cheapest pantyhose they sold at Target and ruberbanded it to the hose end of my siphon. No detectable trace of hops in my bottling bucket.
