    Spring is upon us...

    Looks like I'll start with mayhaws from our trees in the yard, then dew berries growing wild in field. Looks like a bumper crop going by the blooms.

    About to start my first batch of Muscadine Wine, suggestions please!

    Hi, I have made a few batches following Jack Keller's recipes. I must say I had difficulty in measuring OG and SG. The wine turned out fine. I back sweeten to taste. I am starting a batch tomorrow and will try to record the OG and keep a log this batch. Let us know how your's turns out.

    Removing (commercial) wine labels

    Not sure if someone else mentioned this or not. I use goof off on the glue for the plastic Post Famalie type labels. For the paper labels I just soak for a day or two.

    Blackberry Wine

    Using the Keller website, I made 9 gallons of the medium body semi sweet. It is almost ready to bottle. I find it a little dry for my taste and did slightly sweeten it. It seems just right now. Actually I used Apache variety and wild dewberries in this batch.
