    Southern Tier Pumking Clone??

Wouldn't a fully-carbed beer throw off your hydrometer readings though? I suspect the carbonation would make your readings higher than they truly are (unless you left it out so it'd get flat). I'm loving this thread, btw. It reads like a freakin' mystery novel. :mug:

    Tepache Mead

Cracked a bottle open today. Barely any noticeable carbonation to it, but it tastes pretty darn good. Maybe another week of conditioning will lend a few more bubbles to it. Overall, a good endeavor! I'd probably make this again.

Autumn Seasonal Beer Thunderstruck Pumpkin Ale (AG and Extract versions)

Not sure of the exact calculations you'll need to do, but pumpkin pie filling typically has added sugar and spices (and double check for preservatives, that will likely ruin the whole works). You'll likely end up with a higher gravity and more spice flavoring if you use the pie filling along...

    Southern Tier Pumking Clone??

I also reached out to a brewer at Southern Tier for some guidance. I showed him the recipe from the first post in this thread and linked to it in case he was curious to read more, and here's his reply: Major bummer they have to be so tight lipped, but it's understandable given the demand for this.

    Tepache Mead

Going to bottles today. I'm going to prime them and hope for a little additional carbonation. It tastes great, and despite its low gravity still tastes sweet enough. I wish I'd gone a little heavier on the vanilla and hot pepper though. I only used 2 beans for my 3 gallon batch (those two beans...

Fruit Beer Strawberry Alarm Clock v3.0 (Strawberry Blonde)

Removed the strawberries and added the gelatin today. Came in right on target at 1010. The sample I tried was great, and my girlfriend really liked it. The strawberry aroma is fantastic, and the tartness is refreshing. My strawberries were a little long in the tooth and had started to rot. So...

    Tepache Mead

Moved to the secondary with the additional spices today. I re-pitched a second packet of yeast a couple weeks ago. Consequently, this dried out almost completely (went from 1082 OG to 1004 FG). Surprisingly though, it still manages a sweet taste. I'm looking forward to how it tastes after...

Fruit Beer Strawberry Alarm Clock v3.0 (Strawberry Blonde)

Brewed up a batch of this today. Had some crisis with the mash tun leaking madly from its spigot, so I had to go with a half-assed brew-in-a-bag method in the kettle. Hit the target gravity at the end though, so I'm hopeful something drinkable will come out the other end.

    Tepache Mead

I just made this guy yesterday. Used the Piloncillo that the recipe prescribed. It's a bit slow on the bubbling, but this is the first mead-type concoction I've made, so that might be normal. This does look like a good Rum wash. I thought about running it through a still, I'm curious how it'd be.

Autumn Seasonal Beer Thunderstruck Pumpkin Ale (AG and Extract versions)

Did you use pumpkin pie mix or straight canned pumpkin? The mix will have the spices in it already, so you'll probably want to give it a good taste before adding the spice tea. I was looking for good pumpkin for this season and this sounds great. Has anyone had this and Shipyard's Smashed...

Spice, Herb, or Vegetable Beer Ginger Ale

Just about finished brewing it up! I've been fooling with ginger beer (soda versions) for a few months now, and this sounds fantastic. Can't wait to try it out. :rockin:

    Recipe Guidance: Coffee Cream Stout

Hey Martin, Sorry for resurrecting an old thread, but this recipe looked fantastic. I'm curious how it turned out for you. Is this something you let age in the bottle? I've got just about all the ingredients lined up for it (still need to get some coffee). I had to change to a...
