    I'll likely go with a 2x6 collar. Just not this weekend. I'll probably wait to mount the temp controller until the collar gets installed. Testing the freezer with the controller as we speak!

    Actually, there's a sensor that the pot normally sits on that will detect an overheating situation. Since no pot was sitting on it, it was overheating and shutting down. Took the leads off, crimped them together, and fired 'er up again. After 24 minutes, it's still going. Looks like problem solved!

    What's most likely that I did wrong?

    Scottish ale yeast generally has a lower attenuation rate than many other yeasts. I made a wee heavy a couple months back and I think my FG was around 1.018 or so. It was one of the tastiest brews I've made so far. I wouldn't worry about it.

    I had a few ounces of Amarillo zip-locked in the freezer for about a year. I used them for an APA, and found that they were still good for bittering, they had lost most of their aroma. It was still a good brew, just not very aromatic.
