    SG for Port?

I did not stop the wine in time and it fermented out so my only option is to back sweeten. per your advise will probably use a juice. next time will be more vigilent with when to fortify and stop it.

English Barleywine John's Red (English Barleywine)

reread the original recipe. does sound like add at end of mash. I read it as add with 10 min left in boil. went back to my notes. did it that way the first time. second time was reading about long boils with maltier beers and melanoidin (sp?) production so did one at 90 min boil and one at...

Making Traditional rice Wine. Cheap, Fun, and Different

had almost decided to not try again until reading recent posts. I had used glutinous rice from asiansupermarket365.com and their Shanghai Rice Cakes (Yeast Balls) has a very flowery asian aroma and was sweet. the final product was much too much asian flower taste for my and my wife's...

English Barleywine John's Red (English Barleywine)

7 days is not quite ideal but secondary for a month or so should be ok then bottle. there should be enough yeast in suspension with only a week to finish off the beer well. if there is a layer of yeast in the secondary after a few days it is ok. I usually do 2 weeks then the secondary for a...
