    Stonybrook Red Yeast

On a whim I decided to put the dregs of a Sam Adams Stonybrook Red into a 500ml starter. It's been 8 days and I'm starting to see "chunks" of yeast. Has anyone else tried to harvest it? I know there's some brett in it. Does anyone know what type of yeast it is?

    Long Fermentation

I have an IPA that's been in primary for a week now. I was supposed to rack to secondary last Thursday but the fermentation hasn't slowed down. Here's the particulars; OG is 1.065 Yeast is White Labs Californial Ale (WLP001) I used a 1.75L starter which had a krausen that was...

    My Water Test

I just got my water report back from Ward Labs. I think I see two things that I should do; add lactic acid to my mash and some epsom salt to my kettle. Am I on the right track? Is there something else I should do? pH - 8.1 All measurements are ppm Sodium, Na -59 Potassium, K- 2...

    Low Fermentation Temperature

I think everything is OK, but I need some reassurance. I brewed a cream ale on Friday and used WLP080 Cream Ale Yeast Blend (65F-70F). This is the second time I've used this recipe but the first time I used the yeast. I was concerned about fermenting at too high of a temperature so I put my...

    Stir Plate Fan Question

I have finally made my own stir plate. I used the instructions from this website. I tested it out and it works well. My only concern is that the fan doesn't seem to turn as fast as I like. When I stir some water, I get a small dimple in the middle but no vortex all the way down. I'm...

    New Zealand IPA

At the last meeting of our club, someone brought an IPA brewed with only hops from New Zealand. It was delicious. So I decided to try and create one myself. This is the first time I've made a recipe from scratch. So, let me know what you think. Recipe Specifications...

    First All Grain Questions

I did my first all grain recipe yesterday. I brewed NB's Speckled Heifer kit and used BeerSmith 2 to come up with the calculations. I hit the volumes and temperatures but I was consistently short on the gravity. Let me back up and give you some background info. I used 5 gallon water...

    Speckled Heifer with a starter

I am going to make NB Speckled Heifer for my second ever partial mash brew. I plan on making a 1,000 ml starter with 1lb DME and Safale US-05. The recipe calls for 1lb of DME to be added along with the LME at the beginning of the boil. My question is, could I use the DME in the kit to make...

    Hop Substitution

I am going to make the House of Paine American Pale Ale that was in the last issue of BYO. When I went to my LHBS, they had everything but the simcoe hops. So I just got some extra cascade hops to substitute. I feel that I may be settling by not having the simcoe. My only other option...

    Summit Hops and Promash

I am going to make Austin Hombrew's Summit IPA. When I tried to load the recipe in Promash, I couldn't find summit hops. Does anyone have the correct profile for them so I can add it to Promash? This is what I have so far; BJCP Style -------------- 14-B India Pale Ale, American IPA...

    Chocolate Extract vs Cocoa

I bought Northern Brewer's Porter kit and I am thinking about adding some chocolate to make it more of my own. What is the difference between adding cocoa powder during the boil and adding chocolate extract in the secondary? My choices are to add 1/2 Cup cocoa or 1 1/2 oz of extract...

    Is there a problem?

am now working on my first batch of homebrew. I'm making a Belgian White Ale. I bought ingredients from a local homebrew shop . At the store's suggestion, I substituted the yeast with White Labs Belgian Saison I (WLP565). The fermentation was slow to start. I had the fermenter at 68...
